Veggie pancakes with avocado salad
Ingredients: 600g sweet potato, 1 corgette, 1 onion, 2 garlic cloves, 1 tsp ground cumin, 1 tsp ground coriander, 5 Tbspn chickpea flour, 4 Tbspn olive oil, salt and pepper. grate the sweet potato and corgette and wring out excess liquid with a towel, add all other ingredients and form into balls. Fry until golden. Serve with avocado, fresh coriander and tomato.
