Energy balls
Ingredients - 300g dates, 25g pumpkin seeds, 25g dates, 1 tablespoon melted coconut oil, 1 teaspoon vanilla essence, 2 teaspoons maple syrup, 50g oats, pinch salt, desiccated coconut.
Method - blend all ingredients together using a food processor, roll in desiccated coconut, store in fridge, makes 15 small balls.
